This heart-healthy chili is a real game-changer and proof that veggie-packed recipes can be satisfying! Add it to your game day menu and it’s sure to be a fan favorite.
Ingredients:
❤️ 1 cup diced yellow onions
❤️ 1 red pepper, seeded and diced
❤️ 1 carrot, peeled and finely diced
❤️ 2 garlic cloves, minced
❤️ 1 15-ounce can no salt added dark red kidney beans, drained and rinsed
❤️ ½ cup dried green lentils, drained and rinsed
❤️ 2 cups unsalted vegetable broth
❤️2 cups water
❤️ ½ tsp. mild paprika
❤️ 1 tsp. sodium-free chili powder
❤️ 1 pinch cayenne or to taste
Directions:
1️⃣Lightly mist a large stock pot with canola oil cooking spray and warm over medium heat.
2️⃣Add onions, diced pepper, diced carrot and jalapeno peppers. Reduce heat and sauté for 10 minutes until vegetables are translucent.
3️⃣Add garlic and cook for an additional 1-2 minutes.
4️⃣Add tomatoes, beans, lentils, vegetable broth, water and spices.
5️⃣Simmer for 35-40 minutes or until lentils are cooked thoroughly, adding water as needed for desired consistency.
Chef’s Tips:
❤️This chili is delicious served on top of whole wheat spaghetti, brown rice or baked potatoes.
❤️For added flavor, sprinkle with a tablespoon of grated veggie- or soy-based parmesan cheese, chopped cilantro and green onion.
❤️Seitan (a meat substitute), tempeh or baked tofu cubes may be added if desired.
Recipe makes 8 1-cup servings.
