Kuzu (or kudzu) is Japanese Arrowroot plant, native to southern Japan, used as food as well as herbal medicine, and it's also a great substitute for cornstarch.
One of the main uses of kuzu root powder in Japan is to make a syrupy, sweet beverage known as “kuzuyu” for prevention and treatment of common colds.
INGREDIENTS
1 TBS (8 g) kuzu (arrowroot powder)
1 TBS (6 g) brown sugar
1/2 - 1 tsp powder ginger (optional)
1 cup (250 ml) water
1. Mix kudzu powder, brown sugar, and ginger powder (if using) with a cup of cold water.
2. Transfer mixture to a pot, and heat, while constantly whisking, for about two minutes or until it becomes translucent.
