🥘 Lauki ki Sabji in Pressure Cooker
🧂 Samagri (Ingredients):
Lauki (bottle gourd) – 1 medium (peeled & chopped)
Tomato – 1 (optional, chopped)
Green chili – 1 (slit)
Jeera (cumin seeds) – ½ tsp
Hing (asafoetida) – 1 pinch
Haldi powder – ¼ tsp
Dhaniya powder – 1 tsp
Lal mirch powder – ½ tsp (as per taste)
Namak – as per taste
Oil or ghee – 2 tbsp
Pani – ½ cup
Hara dhaniya – for garnish

👩🍳 Banane ka Tarika:
1. Oil garam karo:
Pressure cooker mein tel ya ghee garam karo.
2. Tadka lagao:
Usme jeera daal kar tadka lagao. Jab thoda phatne lage, to hing aur hari mirch daal do.
3. Masale bhuno:
Ab haldi, dhaniya powder aur lal mirch powder daal kar 5–10 second tak bhuno.
4. Lauki daal do:
Kati hui lauki aur namak daal kar ache se mix karo.
5. Tomato daalna ho to:
Ab chopped tomato daal kar 1–2 minute tak bhuno (optional step).

6. Pani daalo:
½ cup pani daal kar cooker ka lid band kar do.
7. Pressure cook:
Medium flame par 2 whistle tak paka lo.
(Lauki bahut soft hoti hai, isliye zyada whistle mat lena.)
8. Steam nikalne do:
Gas band kar ke steam khud se nikalne do.
9. Garnish:
Cooker khol kar lauki ko halka sa mash karo agar chaho, aur dhaniya patta daal do.
