Dubai kunafa Chocolate Dates Bark || Viral Dubai Kunafa Pistachio date bark Recipe - RKC

Ingredients:
20 large medjool dates
200g Kadayif/Kataifi (shredded phyllo dough)
3 tbsp butter
150g pistachio cream
2 tbsp tahini
350g milk or dark chocolate
1 tsp coconut oil
Chopped pistachios (for garnish)
Rose petals for garnish (optional)
Preparation
1. Finely chop the phyllo dough(Kataifi).
2. In a pan, melt the butter, then add the shredded phyllo dough. Toast over medium heat for 15-20 minutes, stirring continuously until golden brown. Alternatively you can do this in the oven as well.
3. Once golden, transfer the toasted dough to a mixing bowl. Add the pistachio cream and tahini, mixing well until fully combined.
4. Remove the pits from the dates and arrange them flat on a lined tray. Use a rolling pin or glass to gently flatten them. If the dates are particularly sticky, place a second sheet of parchment paper on top before rolling.
5. Spread the kunafa mixture evenly on top of the dates, then refrigerate for 30 minutes.
6. In a heatproof bowl, melt the chocolate and coconut oil together. I used here double boiler method. You can do this in the microwave as well.
7. Pour the melted chocolate over the kunafa mixture and smooth it out with a spatula.
8. Sprinkle chopped pistachios on top while the chocolate is still melted.
9. Refrigerate the bark for at least an hour, allowing it to completely set before cutting into pieces.
10. Store in an airtight container in the fridge.
