RECIPE INGREDIENTS IN ENGLISH AND RUSSIAN ⬇️Orange Chicken Roast with Fennel and Shallots
►3 tbsps. fennel
►3 tbsps. coriander seeds
►2 tsps. garlic powder
►3 tbsps. salt
►½ cup oil
►¼ cup honey
►2 tsps. Dijon mustard
►Zest 4 oranges
►10 sage leaves
►4 sprigs thyme
►4 lbs. each whole chickens
►4 oranges
►2 fennel bulbs (save the fronds for plating)
►2 shallots
Preheat oven to 425F. Once your chicken is at room temperature, roast covered in the oven for 30 minutes, then remove the foil and bake for an additional 40 -50 minutes, depending on the size of your chicken. It is imperative to use a meat thermometer to make sure your chicken has reached the safe temperature of 165F. Come back to the chicken every 10 minutes or so, and using a spoon, scoop out and drizzle the juices from the pan all over the chicken skin to crisp up. You’ll notice some spots starting to get darker or burn, as soon as you see that, tear up a piece of aluminum foil and cover the spot to prevent it from burning.
