Today we’ll make Malai Kesar Pista Rolls without using any gas.
This sweet looks as royal as it tastes—rich, creamy, and absolutely delicious.
First, take a mixer grinder and grind sugar with cardamom into a fine powder.
Now add 250 g paneer, 100 g desiccated coconut, and 3–4 tablespoons of milk (in which saffron has already been soaked).
Blend everything well to make a smooth mixture.
Next, transfer this mixture to a plate and gradually add milk powder, mixing slowly so that it binds properly.
Also, add some chopped pistachios. You can include any dry fruits of your choice.
Now it’s time to prepare the rolls.
Grease a butter paper lightly with ghee, then decorate it with rose petals and pistachios.
Place the prepared mixture on top and roll it tightly.
Keep it in the freezer for 15–20 minutes so it sets well.
Once set, carefully remove the roll from the butter paper and cut into thick or thin slices as per your preference.
Finally, garnish with edible silver leaf.
Even if you don’t have silver leaf, this sweet will still look and taste royal.
