Standard-sized Omnia Oven
Standard-size silicone pan
Ingredients:
12 oz (340g) fresh baby spinach
2 15- oz cans (850g total) black beans rinsed & drained
16 oz (455g) tomatillo salsa
1 can, 10 oz (283g) Green Chile Enchilda Sauce
1 can, 4 oz (113g) Green Chilis, diced
¾ tsp (3.75ml) chili powder
¾ tsp (3.75ml) ground cumin
¾ tsp (3.75ml) smoked paprika
⅛ tsp (0.62ml) cayenne pepper optional
Salt & Pepper to taste
1 cup (120g) pepper jack cheese, grated
¼ cup (30g) grated cheddar cheese
12- 6 " (15cm each) corn tortillas
1 tbsp (15g) butter, unsalted
Instructions:
In a large skillet set over medium heat, melt the butter and add the spinach. Cook, stirring occasionally, until the spinach is fully wilted.
Season lightly with salt and pepper, then remove from the heat.
Transfer the spinach to a fine-mesh colander and press gently to remove any excess moisture; set aside.
Place the black beans in a large mixing bowl and stir in the chili powder, cumin, smoked paprika, cayenne (if using), salt, and black pepper until evenly coated.
Spread one-third of the tomatillo salsa evenly over the bottom of the Omnia oven.
Arrange 5 corn tortillas over the salsa, overlapping slightly to cover the surface.
Spoon half of the green enchilada sauce over the tortillas, followed by half of the spinach, half of the seasoned black beans, and half of the Pepper Jack cheese.
Layer 5 more tortillas over the cheese, then spread another one-third of the salsa on top.
Evenly distribute the remaining spinach and black beans, then pour over the remaining green enchilada sauce.
Sprinkle with the diced green chiles and the remaining Pepper Jack cheese.
Cut the remaining 2 tortillas in half to form half-moon shapes and arrange them over the top. Spread the final one-third of the salsa evenly over the tortillas and sprinkle with the Cheddar cheese.
Bake at 225°F (110°C) for about 40 minutes, or until the cheese is melted, bubbly, and lightly golden.
Let the casserole rest for 10–15 minutes before serving. Garnish with chopped cilantro and diced tomatoes, if desired.
