Here’s my version of Khao Piak Sen- The famous Laos Chicken noodle soup with homemade noodles from scratch and of course, Garlic Pork Oil which bumps up the flavor even more! Enjoy!
Serves 6-8 Servings
2 Cups of Rice flour- Red bag- You can use the Erawan brand or Flying horse brand.
2 Cups of Tapioca Flour- Blue bag- Erawan or Flying horse brand.
Boiling hot water- I started off with 1 cup of boiling water then added 1/2 a cup of boiling water during kneading. So you adding boiling water is up to how your kneading goes.
****Reminder that you MUST USE BOILING WATER OR THE DOUGH WILL NOT WORK”.
**** Reminder to be cautious as the dough is very hot to handle, start kneading slowly at a time.
1 Gallon of water in large pot + 3-4 lemongrass stalks + 1/4 cup of chicken boiling. You can add salt to your preference.
I use 1 chicken leg quarter and 1 large chicken breast. your preference. 1-2 pounds.
Garlic Pork Oil:
1/2 pound Ground pork
1/2 cup of oil
Cook until golden brown and crispy if prefer.
Herbs I use + Limes
-Cilantro
-Green onions
Culantro
Condiments for final seasoning:
Fish sauce
Black pepper
Garlic chili oil paste
Dry pepper flakes
