Peri Peri Chicken with Spiced Rice Recipe

Ingredients
For the Chicken:
6 chicken tenders
2 tsp peri peri seasoning
2 tsp paprika
½ tsp salt
3 tbsp olive oil
For the Rice:
¼ red pepper, chopped
¼ green pepper, chopped
¼ yellow pepper, chopped
½ white onion, chopped
1 tsp tomato paste
2 tsp oregano
1 tsp paprika
1 tsp cumin
½ tsp turmeric
1 cup rice, soaked and washed
800 ml (about 2 large cups) chicken stock
Fresh parsley, chopped (for garnish)
Instructions
Prepare the Chicken:
Coat the chicken tenders with peri peri seasoning, paprika, salt, and olive oil.
Heat a pan over medium-high heat and fry the chicken tenders for 3-4 minutes on each side, or until a food probe shows an internal temperature of 75°C (165°F).
Remove the chicken from the pan and cover with tin foil to keep warm.
Cook the Vegetables:
In the same pan, add the chopped red, green, and yellow peppers, and the chopped white onion.
Cook for 2-3 minutes until they start to soften.
Add Spices and Rice:
Add the tomato paste, oregano, paprika, cumin, and turmeric. Cook for another 2 minutes, stirring continuously to prevent burning.
Add the soaked and washed rice, stirring well to coat it with the spices and vegetables.
Cook the Rice:
Pour in the chicken stock, stir, and bring to a boil.
Cover the pan with a lid, reduce the heat to medium, and cook for 5-7 minutes.
Lift the lid, stir the rice, and then simmer for another 5-7 minutes or until the rice is cooked through.
Finish and Serve:
Slice the chicken tenders and place them on top of the rice.
Garnish with fresh parsley and serve hot.
