Recipe -
Ingredients:
FOR PREPARING MATAR STUFFED KULCHA :
1. Green Peas / Hare Matar - 1 Cup parboiled
2. Ginger / Adrak - 1 Inch Chopped
3. Green Chilli / Hari Mirchi - 1 Chopped
4. Coriander Leaves / Hara Dhaniya - A handful
5. Onion / Pyaz - 1/2 Finely chopped
6. Gram Flour / Besan - 1 tbsp
7. Salt - As per taste
8. Red Chilli Powder / Lal Mirch Powder - 1/2 tsp
9. Cumin Seeds / Jeera - 1/2 tsp
10. Whole Wheat Dough / Gehu Ka Aata - As required
11. Clarified Butter / Ghee - As required
12. Onion Seeds / Kalonji - As required
13. Water - As required
14. Butter - As required
FOR PREPARING PYAZ KA ACHAR :
1. Onion / Pyaz - 2 Finely chopped
2. Coriander Leaves / Hara Dhaniya - A handful
3. Green Chilli / Hari Mirchi - 1 Finely chopped
4. Salt - As per taste
5. Red Chilli Powder / Lal Mirch Powder - 1 tsp
6. Mustard Oil / Sarso Ka Tel - 1 tbsp
7. Asafoetida / Hing - A pinch
8. Lemon Juice / Nimbu Ka Ras - Of 1/2 Lemon
Instructions:
FOR PREPARING MATAR STUFFED KULCHA :
1. Take green peas in a grinding jar. Add ginger, green chilli, and coriander leaves. Coarsely grind it for a few seconds then take it out in a mixing bowl.
2. Add coriander leaves, onion, besan, salt, red chilli powder, and cumin seeds. Mix well.
3. Take the medium ball sized medium-soft whole wheat dough and make a round shaped circular peda from the dough. Dust it with flour and roll a peda to make a small roti.
4. Apply ghee on it. Then add the prepared matar stuffing in the center of it. Join the edges and seal it properly. Slightly press it. Dust it with flour and roll it with light hands to make a kulcha.
5. Spread kalonji on it and slightly press it with a rolling pin. Apply water on the plain side of the kulcha.
6. Meanwhile, heat a tawa. Place the water-coated surface side down on a heated tawa, Roast it for 2 to 3 minutes on low flame.
7. Then flip the tawa upside down and cook the kulcha directly on the flame until it turns golden brown. Then remove it from the tawa. Slightly roast it from the plain side on a direct flame.
8. Once roasted well from all sides. Take it out to a serving plate and apply butter on it.
FOR PREPARING PYAZ KA ACHAR :
1. Heat mustard oil in a tadka pan. Add asafoetida and after a few seconds turn off the flame.
2. Take onion in a mixing bowl. Add coriander leaves, green chilli, salt, red chilli powder, prepared tadka, and lemon juice. Mix well.
3. 'Matar Stuffed Kulcha With Pyaz Ka Achar' is ready to be served.
