Eshwar Rao entered the kitchen of a generations-old military hotel when he was barely into his teens. It was here that he learnt age-old Karnataka-Maratha recipes from his mentor, Rukmini Bai over decades of diligent labor, that he now serves up in his rustic eatery, S G Rao’s Military Hotel in Cottonpet, Bengaluru. I met this entrepreneur, now in his forties, and caught the making of a unique military style pulav, in addition to a tasting of some of the other must-haves here. The pulav here is cooked only with the gravy of the meat, the meat that is then layered under the rice just before serving.
