Delicious Chicken Tortilla Wraps with Béchamel Sauce

Ingredients:
For the Chicken Filling:
• 2 chicken breasts, cut into small cubes
• 1 onion, chopped
• 3 cloves of garlic, minced
• 1 carrot, shredded
• ¼ of each: red, yellow, green, and orange peppers, chopped
• 3 tbsp olive oil
• 1 tsp paprika
• ¼ tsp oregano
• ½ tsp black pepper
• ¼ tsp turmeric
• Salt to taste
• ⅓ cup tomato sauce
• ⅓ tsp sugar
• Parsley, chopped
For the Béchamel Sauce:
• 2 tbsp olive oil
• 1 tbsp butter
• ½ cup flour
• 4 cups milk
• ¼ tsp black pepper
• Salt to taste
Additional:
• 1 package of tortillas
• 25g mozzarella cheese, shredded
• ½ cup shredded cheese (for filling)
• Butter for greasing
Instructions:
Step 1: Prepare the Chicken Filling
1. Heat 3 tbsp olive oil in a pan.
2. Add the chicken cubes and fry until they change color.
3. Season with paprika, salt, and oregano. Mix well.
4. Add the chopped onion and cook for 5 minutes, stirring occasionally.
5. Add black pepper, turmeric, shredded carrot, and minced garlic. Cook for another 3 minutes.
6. Add tomato sauce and sugar. Mix, cover, and cook for 5 minutes on medium heat.
7. Add the chopped peppers and cook for another 5 minutes.
8. Stir in chopped parsley, remove from heat, and set aside.
Step 2: Make the Béchamel Sauce
1. In a pan, heat 2 tbsp olive oil and 1 tbsp butter.
2. Add the flour and stir until it turns light golden.
3. Gradually add the milk while stirring continuously to avoid lumps.
4. Season with black pepper and salt. Stir until the sauce thickens, then set aside.
Step 3: Assemble the Tortilla Wraps
1. Preheat your oven to 350°F (175°C).
2. Grease an ovenproof dish with 1–2 tsp butter and spread half of the béchamel sauce on the bottom.
3. Take a tortilla, add 1 tbsp shredded cheese and some chicken mixture, then roll it up.
4. Place the rolled tortilla in the dish. Repeat with the remaining tortillas and filling.
Step 4: Bake and Finish
1. Pour the remaining béchamel sauce over the top of the tortillas.
2. Bake in the preheated oven for 30–40 minutes.
3. Add the shredded mozzarella on top and bake for another 5 minutes, or until the cheese melts.
4. Let it cool slightly before serving.
Serving Suggestion:
Serve warm with a fresh salad on the side. Enjoy!
