Over the years I've received a handful of questions that go something like this: "I don't have a pressure cooker, can I make grain spawn in my instant pot?" I've always told people no, the instant pot doesn't get hot enough. The standard instant pot (Duo model) gets up to about 11.6 PSI, which is equivalent to about 240F (115C). The standard pressure cooker operates at 15 PSI, equivalent to 250F (121C). It was my theory that this 10F difference was sufficient enough to not completely kill off the thermophilic bacterias in our grain.
I decided to do an experiment: after soaking a huge batch of grain, I separated three jars off and sterilized them in the instant pot for 90 minutes, while the rest of the batch went in the pressure cooker for 60 minutes. I then inoculated all the jars with the same spawn, black pearl king oyster.
After 13 days of incubation, the jars were colonized enough to be able to interpret the results. Check out the video to see how it went!
