Last week, reverse-wrap ribs blew us away. This week? Let’s just say brisket wasn’t as kind. After a bunch of viewer requests, we tried the same controversial “reverse-wrap” technique on a full 17 lb brisket… and things did not go according to plan.
The Reverse-Wrap Method (wrap first, smoke later) gave us stick burner-level smoke on a pellet grill for ribs. So we thought: What if it works on brisket too?
Turns out… brisket plays by different rules.
