Ingredients:
3 bunches bok choy, thinly sliced
3 scallions, sliced (whites + greens separated)
1 jalapeño, thinly sliced
1 red Fresno chili, thinly sliced
4 cups mung bean sprouts
4 eggs
14 oz rice noodles, prepared
6 tbsp Pad Thai sauce
½ cup crushed peanuts
4 limes, wedges
Fresh cilantro
Coconut oil
Instructions:
1. Prep scallions and cook rice noodles. Whisk eggs.
2. Scramble eggs in coconut oil, remove and set aside.
3. Sauté bok choy, add scallion whites, sauce, and noodles.
4. Toss in eggs, sprouts, peanuts, and scallion greens.
5. Garnish with cilantro, lime, and extra peanuts.
