वनीला (Vanilla) दुनिया की दूसरी सबसे महंगी फसल है, जिसकी कीमत 25,000-40,000 रुपये प्रति किलो तक होती है। वनीला के पौधों को परिपक्व होने में 9 से 10 महीने लगते हैं, जिसके बाद इसके फलों से बीज निकाले जाते हैं। इन बीजों का उपयोग आइसक्रीम, सौंदर्य प्रसाधन और सुगंधित उत्पादों में किया जाता है। भारतीय मसाला बोर्ड के अनुसार, दुनिया भर में बनने वाली आइसक्रीम में 40% वनीला फ्लेवर का उपयोग किया जाता है, जिससे इसकी बाजार में भारी मांग बनी रहती है।

भारत में इसकी खेती मुख्य रूप से दक्षिण भारत और पूर्वोत्तर राज्यों में की जाती है। असम के प्रगतिशील किसान अमर बासुमतारी स्ट्रॉबेरी के साथ वनीला की खेती भी कर रहे हैं। उन्होंने खुद दक्षिण भारत से वनीला का एक पौधा मंगाकर इसकी खेती शुरू की।
