After a year away, I’m back on YouTube.
In this video, I share why I chose not to return to my hospital nursing job after maternity leave and what life looks like now. Slower days, motherhood focused, lots of home cooked meals and building my own business in the small gaps in between it all.

Beef Bourguignon:
3 lbs stewing beef, cubed • 2 cups dry red wine • ¼ cup olive oil • 1 onion & 1 carrot, chopped • 2 garlic cloves • 2 bay leaves • 1 tsp parsley • ½ tsp thyme • 1 tsp black pepper • 2 tsp salt • 4 oz bacon • 2 tbsp flour • 2 cups pearl onions • 2 cups sliced cremini mushrooms
Method
Marinate beef with wine, oil, vegetables, herbs, and seasoning for 24 hrs.
Cook bacon in skillet; then add to instant pot. Sear beef in batches and add to instant pot. Sauté remaining veg (no liquid), stir in flour and cook 1 min.
Add marinade + pearl onions. Cook 30 min High Pressure.
Add mushrooms, cook 5 min more.
Thicken with cornstarch slurry if needed.
