Winter sowing and cold stratification | What I'm starting in January in zone 7a/b

Hello and welcome back to Our home to haven! join me as I sow my seeds that need cold stratified, I will be doing a new method, that will hopefully work! and also I will be starting my onions and celery in to-go containers.
Many seeds get a leg up by cold stratification, and in the past I have not been successful in other methods so I will be using gallon jugs and mimicing a green house out doors, hopefully, in spring I will have some beautiful starts!
The flowers I have to cold stratify are: Cleome, lavender, echinacea, snap dragon, milkweed,
My onions are : Patterson F1, Sweet Yellow Spanish, Ailsa Craig, and Zebrune Shallots.
