APPLE CRUMBLE
Makes 8 Servings
INGREDIENTS
For the Apple Mixture:
60 grams unsalted butter
1,200 grams (Edible Portion*) Fuji or Granny Smith apples, peeled, cored, and cut into 2 cm cubes
180 grams dark brown sugar
1.5 grams ground nutmeg
5 grams ground cinnamon
30 grams freshly squeezed lemon juice
6 grams finely grated lemon zest
50 grams raisins
50 grams lightly toasted and coarsely chopped walnuts
30 grams cornstarch
60 grams still mineral water
50 grams dark rum
For the Crumble:
150 grams sifted all-purpose flour
100 grams dark brown sugar
100 grams cold unsalted butter, cut into 1 cm cubes
*Edible Portion - this represents the weight of the apples AFTER they have been peeled, cored, and cut into 2 cm cubes
