奶粉20克(3大匙)
酵母3克(3/4小匙)
白糖5克(1小匙)
牛奶180克(室溫)(3/4杯+2大匙)
餡料:
雞蛋黃4個
奶粉30公克(4大勺+1小勺)
中筋麵粉30克(1/4杯)
玉米澱粉30克(5大勺)
白糖30~40克(2~3大勺)
牛奶160克(3/4杯+2小勺)
無鹽黃油30克(2大勺)
水沸騰後上鍋開始蒸
蒸籠頂部冒出蒸氣後開始計時
蒸15分鐘
關火後燜3~5分鐘後開蓋

1 cup = 200 ml
Dough:
300g all-purpose flour (2 + 1/2 cups)
20g milk powder (3 tbsp )
3g instant yeast (3/4 tsp )
5g sugar (1 tsp)
180g milk (room temperature) (3/4 cup + 2 tbsp)
Filling:
4 egg yolks
30g milk powder (4 tbsp+ 1 tsp)
30g all-purpose flour (1/4 cup)
30g cornstarch (5 tbsp)
30-40g sugar (2-3 tbsp)
160g milk (3/4 cup + 2 tsp)
30g unsalted butter (2 tbsp)
Bring water to a boil and steam. Start timing when steam appears on the top of the steamer. Steam for 15 minutes. Turn off heat and simmer for 3-5 minutes before removing lid.
