Mixed vegetable sabzi mix veg recipe is a simple home-style Indian sabji to serve with Roti and paratha. This mix veg is a dry curry cooked with mixed vegetables and minimal spices.
Mix Veg Recipe
Ingredients 🫑🥕🥦🥔
• Potato(diced in triangle) -- 2 small
• Carrot(diced) -- 2 small
• Capsicum(diced) -- 2 medium-sized
• Beans(diced) -- 15-20 pieces
• Cauliflower(boiled) -- 7-8 florets
• Onion(sliced) -- 2 medium-sized
• Tomato(sliced) -- 1 big
• Green chilies(chopped)-- 4-5
• Kashmiri laal mirch powder -- 1 teaspoon
• Turmeric powder ‐- 1 teaspoon
• Cumin powder -- 1 teaspoon
• Coriander powder -- 2 teaspoons
• Fresh cream/malai -- 2 tablespoons
• Dried fenugreek leaves(kasuri methi) -- 1 teaspoon
• Salt -- as required
• Refined oil(for cooking) -- 2 tablespoons
• Water -- as required
• Coriander leaves (chopped) -- few strands
Method:
• First, slightly heat a kadhai and take refined oil ,heat the oil and add diced potatoes,and boiled cauliflower cook it on low flame.
• Now add carrots,capsicum, and beans, fry everything,now add onion,green chilies, and salt mix well and cover the kadhai and let everything be cooked for 8-10 minutes on low flame.
• Now,add tomatoes,laal mirch powder,turmeric powder,cumin powder, and coriander powder, and mix everything.
• Add fresh cream or fresh homemade malai. In the same bowl, take 2 tablespoons of water and add it to kadhai, as shown in the video.
• Mix everything and cover the kadhai and let everything cook for another 10 minutes on low flame.
• Now add roasted kasuri methi by crushing it between both hands.
• Mix well. You can add water at this stage if required and cook for 2 minutes.
Sprinkle chopped coriander leaves.
Your mix veg recipe is ready to be served.
Serve hot with poori,paratha, naan or any other bread of your choice.
