Chocolate Cream Pie
In a 2-cup measuring cup:
• 3 eggs
• 1 yolk (save the white for meringue)
• Fill cup with milk to just above 2 cups
• Whisk to combine

In a microwave-safe bowl sift together:
• 1 cup sugar
• 1/3 cup cornstarch
• 1/4 cup cocoa
Add egg mixture to microwave bowl and combine with dry ingredients.

Microwave:
Microwave at half power.
Start with 3 minutes, then reduce time each additional cook.
Whisk thoroughly between each interval.

When thick, add:
• 2 tablespoons butter
• 1 – 1 1/2 teaspoons vanilla

Make meringue with remaining egg white:
(Whisk to stiff peaks, slowly adding 1 tablespoon sugar)
Fold meringue into hot pie filling.

Assemble:
Pour into baked pie shell, cover with plastic wrap, and chill.

When ready to serve:
Top with whipped cream and chocolate shavings.

Whip Cream:
• 2 cups cold heavy cream
• 1/4 cup powdered sugar (or to taste)
• 1 teaspoon vanilla
Whip to stiff peaks.
