I thought it would be fun to make every recipe in Emelia Jackson’s “Some of my Best Friends are Cookies”. Welcome to my kitchen! I wanted to love these biscuits, but I just...didn't. Maybe it was because I lost some of the caramel out the bottom of the tin, but the shortbread didn't have the crisp texture I wanted. I will probably try making these again using a solid pan, just in case that was the reason that these were a little underwhelming.
