CAMBODIAN KROEUNG, A SPICE PACKED PASTE

Cambodian kreoung is another one of those essential ingredients found in the side door of my fridge, as it would be in many Cambodian households. Kroeung is basically a blend of various spices/herbs that make up the base flavour of many khmer dishes, the paste is most commonly made in 3 various ways depending on the 'hero' ingredient. These 3 various pastes are known by their colour; either red, green or yellow depending of your preferred colour and powering flavour, you basically substitute or add more of a particular ingredient. For example red kroeung uses more chilli, the green uses more lemongrass and the yellow uses more turmeric. For this particular recipe and my personal preferred kroeung, I had chosen the red variation.
