Choux au craquelin

Recipe 12 Choux..:
Filling:
Step 1 Mix and reduce on the stove until thick and then let cool in the fridge
100g Sugar
6 Egg Yolks
30g Cornstarch
600g Milk
Step 2
Wisk cream and powdered sugar until stiff
280g Cream
30g Powdered sugar
Step 3 fold 1 & 2 together and place in piping bag and place in the fridge.
Craquelin Cookie:
65g sugar
65g Flour
65 Butter
Mix everything and use a rolling pin to flatten out. place on a tray and cut out the circles (~1,5 cm bigger than the Choux) put it in the freezer.
Choux:
2,5g salt
2,5g sugar
90g flour
180g eggs
70g butter
80g water
80g milk
Heat water, butter and milk until boiling. Lower the heat and ad dry stuff and stir until it no longer sticks to the bottom of the pan. Let it cool a bit and then ad the eggs in a mixer. Put in a piping bag. Pipe it out on a baking sheet, ad the craquelin and put in oven at 175/347 for 30 min.
Release some heat from the oven, cut a hole in the bottom and then place in the slightly open oven to let them dry. Use filling to till. And enjoy..
