Brisket cooked on my Traeger Pro 34. Trimmed and seasoned with Killer Hogs TX. Aluminum pan with water directly on the drip pan to catch the renderings and for moisture. Cooked for the first 4 hours at 225°. Then 2 hours at 250°. Wrapped the brisket in a foil boat and let it go 2 more hours. Turned it up to 275° for 2 and a half hours to get through the stall. Finally 300° for the last hour to get the fat on top rendered and the brisket feeling probe tender. Pulled when the flat was 212° and the point was at 208°. Let rest down to 165° and put in my oven set to 160° for 10 hours. It turned out amazing. Who says you can't get good brisket on a pellet grill.
