🎂victoria Sponge Ingredients
200g plain flour
2 tsp baking powder
200g caster sugar
200g unsalted butter, softened
4 large eggs
1 tsp vanilla extract (optional)
2 tbsp milk (optional – helps keep it moist)
👩🍳 Sponge
1. Preheat oven to 180°C (160°C fan) / 350°F / Gas 4.Grease and line two 20cm (8-inch) round cake tins.
2. Sift the flour and baking powder together into a bowl. Set aside.
3. In a large bowl, cream the butter and sugar together until light and fluffy.
4. Beat in the eggs, one at a time, mixing well after each addition.Add the vanilla if using.
5. Fold in the flour mixture gently using a spatula or metal spoon.Add milk if the batter is very thick.
6. Divide the batter evenly between the two tins and smooth the tops.
7. Bake for 20–25 minutes until golden, risen, and a skewer comes out clean.
8. Cool in tins for 5 minutes, then turn out onto a wire rack to cool completely.
Strawberry jam (3–4 tablespoons)
Whipped cream or buttercream (optional but classic)
Icing sugar, to dust the top

🧁 Easy One-Bowl Chocolate Cupcakes
Makes 12 cupcakes
1 cup plain flour (125g)
¾ cup sugar (150g)
⅓ cup cocoa powder (40g)
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 egg
½ cup milk (120ml)
¼ cup oil (60ml)
1 tsp vanilla
½ cup boiling water (120ml)
Optional Add-ins (about ½ cup):Chocolate chips, nuts, berries, marshmallows, crushed Oreos, etc
👩🍳 Steps:
1. Preheat oven to 180°C (160°C fan) / 350°F. Line a 12-cup muffin tin.
2. In a large bowl, mix flour, sugar, cocoa, baking powder, baking soda, and salt.
3. Add egg, milk, oil, and vanilla. Mix until smooth.
4. Carefully add boiling water. Stir well. (Batter will be thin — that’s okay!)
5. Add your extras now if using (e.g. choc chips, nuts, etc). I added peanut butter in the middle.
6. Pour batter into cupcake cases (about ⅔ full).
7. Bake for 18–22 minutes, until a toothpick comes out clean.
8. Let cool. Top with frosting or enjoy as-is!
UPSIDE DOWN Applesauce Cake
¾ cup unsweetened applesauce
½ cup water (or use milk or plant milk for more richness)
1 tbsp apple cider vinegar (helps activate baking soda)
2 tsp vanilla extract
⅓ cup brown sugar (can increase to ½ cup if you want it sweeter)
→ Whisk until smooth.
1½ cups all-purpose flour
½ tsp ground cinnamon
¾ tsp baking soda
¾ tsp baking powder
½ tsp salt
For bottom:
1 apple sliced-2 tabsp Butter-3 tabs brown sugar-3 tabsp white sugar- pinch of salt & 1-2 tsp cinnamon powder
Bakt @350F OR 175C for 30-35 minutes or skewers comes out clean.

🍑Tart & 🍓 crumble
I have doubled up the following recipe to make two different versions .
For the crust & topping (same dough):
1½ cups all-purpose flour
½ cup rolled oats
½ cup brown sugar
¼ tsp salt
½ tsp baking powder
¾ cup unsalted butter (melted)
For the fruit filling:
2 ripe peaches/2 cup berries
2 tbsp sugar (adjust to taste)
1 tbsp cornstarch
1 tsp lemon juice
½ tsp vanilla extract (optional)
Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
🍌Banana Bread easy
3 ripe Bananas
2.5 cups all purpose flour
2 Eggs
1.5 cups sugar( combine brown & white)
1/2 cup vegetable oil
1/4 cup milk
1 teaspoon Baking Soda
1 teaspoon Vanilla Essence
Option: sprinkle 1 teaspoon Cinnamon powder on top. Add chopped Walnuts.
Preheated oven 325 degrees Fahrenheit
Check at 50 minutes- looks dark but uncooked ,loosely cover it with foil and keep baking. Usually takes 1 hour 5 minutes or until skewer comes out clean. Depends on your oven and loaf size.
