Canning dry beans for a quick meal through the week. Life gets busy and sometimes you just want a quick meal. So, I started canning packaged dry beans with seasonings. The research I've been doing states you can only safely do this in a pressure canner. I'm not an expert, I just love canning.
1/2 cup of dry beans to a pint.
1 cup of dry beans to a quart.
Fill with water or broth, leave 1 inch headspace
Process in a pressure canner at 11 PSI for 75 minutes for pint jars or 90 minutes for quart jars.
My pressure canner is a Presto 23 quart canner. I bought if from Amazon.
