Beetroot Sourdough Bread
甜菜根天然酵母面包
Ingredients :
100g Starter
310g Beetroot juice
450g Bread flour
7g Sea Salt
Method :
1.Mix the dough ,let it rest for 30 minutes .
2. Add in the sea salt.
3. 1st Fold (30 folds), 1 hours rest
4. 2nd Fold (6-8 folds),1 hours rest
5. 3rd Fold (6-8 folds), 1 hour rest
6. Preshape, 1 hour rest
7. Final shape, put it into the basket
8. Refrigerate it overnight
9. Remove from fridge the next morning, flip the dough downwards up to score the dough.
10. Insert the dough into the oven preheated at 230°C and bake for 15 minutes.
11. After Baking for 15mins,lower the temp. to 190°C and bake for another 20-25mins.
材料:
100g 天然酵母菌
310g 甜菜根汁
450g 高筋面粉
7g 海盐
步骤 :
1.混合搅拌材料至不见干粉,静置30分钟
2.加入海盐
3. 30 次拉折法,静置1小时
4. 6-8 次拉折法,静置1小时
5. 6-8 次拉折法,静置1小时
6. 整成圆形后,静置1小时
7. 整成橄榄圆形,放入藤篮
8.放进冰箱冷藏一夜。
9. 隔天早上冰箱取出,面团从藤篮倒扣割包。
10. 放入预热230度的烤箱,烤15分钟。
11. 烘烤15分钟后,降温到190°C 继续烘烤20-25分钟。
