In this video, I eat, train, and dish on the life of Pamela Anderson. There are a few good surprises along the way! I prepare 3 vegan meals - super easy and oh so tasty! It's a load of fun, and I hope you enjoy it as much as I enjoyed making it.

QUINOA PASTA SALAD RECIPE
Ingredients:
-choice of quinoa pasta (I used a long one)
-2 cloves roasted garlic (wrap in foil and bake in oven at 400 for 1 hour)
-1/4 cup sundried tomatoes, chopped
-1 tbsp roasted pine nuts
-1 tomato, chopped or chopped cherry tomatoes
-chopped roasted beets, optional
-arugula or baby spinach, optional
Dressing:
-1 tbsp olive oil
-juice of 1/2 lemon
-salt & pepper, to taste
Mix the ingredients together and enjoy!
MOROCCAN STEW RECIPE
Be creative, you don't have to use the exact veggies listed - use what you have. I used the Instapot but you can make it on the stove - just make sure your veggies are soft.
Ingredients:
-1 small butternut squash, washed, seeded & chopped (you don't need to peel it)
-3 carrots, chopped
-2 stalks celery, chopped
-2 medium onions, chopped
-1 cup tomatoes, roughly chopped
-5 cloves garlic, chopped
-1/4 cup fresh cilantro, chopped
-2 19oz (or 540 ml) cans of chickpeas, rinsed or 1+ cups of dry chickpeas, soaked overnight
-900ml vegetable broth
-2 tsp cumin
-1 tsp ground coriander
-2 tsp cinnamon
-2 tsp paprika
-1 tsp turmeric
-1/2 tsp cayenne (omit if you don't like it spicy)
-1 - 1 1/2 tsp salt (if you're using salt free broth. otherwise, omit)
-vegan Greek yogurt
-fresh spinach
Don't stress about the spices. Make sure to use cumin and cinnamon.
1. In your Instapot, saute onions and garlic for 2 minutes. Add celery, carrots, and squash and stir to combine.
2. Add spices to the pot with the veggies. Add vegetable broth.
3. Add in chickpeas, reserving 1 cup for later.
4. Seal the pot and either use the soup/stew function, or 30 minutes at high pressure.
5. Release pressure at your leisure.
6. Using an immersion blender, blend until smooth.
7. Add reserved chickpeas, chopped tomatoes, and fresh cilantro.
8. Top with vegan Greek yogurt and fresh spinach and enjoy!
