Dining on the move was a new phenomenon in the nineteenth century. Stage Coaches stopped at 'Coaching Inns' en route to change horses and so passengers could refresh themselves. The new railways didn't need to change horses, but passengers still needed some refreshment. At first railway companies banned the sale and consumption of food and alcohol on their trains and premises, but later saw this was a useful revenue stream. Finally, in the 1890s the Dining Car, sumptuous palaces on wheels, were born.
