Ramen Apple Coleslaw
INGREDIENTS
• (14-16 oz) * 1 package coleslaw mix (shredded cabbage and carrots)
• * 1 cup thinly sliced apple (use your favorite variety - Granny Smith, Fuji, Honeycrisp, Gala, or even a mix)
• * 1/4 cup chopped green onions
• * 1/4 cup chopped cilantro
• * 1/4 cup slivered almonds, chopped peanuts, or toasted sesame seeds (or a combination)
• * 1 package (about 1 oz) ramen noodles, crushed (you can use the seasoning packet if you enjoy the flavor, or discard it for a milder taste)
Dressing:
• * 3 tablespoons vegetable oil or sesame oil
• * 3 tablespoons rice vinegar
• * 2 tablespoons soy sauce (or tamari)
• * 1 tablespoon honey or maple syrup (adjust to your sweetness preference)
• * 1 teaspoon grated fresh ginger (optional)
• * 1 clove garlic, minced (optional, but adds flavor)
• * 1 teaspoon sesame seeds (for extra flavor and texture in the dressing)
• * Pinch of red pepper flakes (optional, for a little heat)
PREPARATION STEPS
1. * Prepare the Apple: Wash, core, and thinly slice your chosen apple. You can cut the slices into matchsticks or small dice.
2. * Combine Salad Ingredients: In a large bowl, combine the coleslaw mix, sliced apple, green onions, and cilantro.
3. * Toast the Nuts/Seeds (Optional): Lightly toasting the nuts or sesame seeds in a dry skillet over medium-low heat until fragrant enhances their flavor. Watch them carefully to prevent burning.
4. * Crush the Ramen Noodles: Place the ramen noodle block in a zip-top bag and gently crush it into small pieces. If you're using the seasoning packet, you can add a portion of it to the dressing later.
5. * Make the Dressing: In a small bowl or jar, whisk together the vegetable oil (or sesame oil), rice vinegar, soy sauce (or tamari), honey or maple syrup, grated ginger (if using), minced garlic (if using), and sesame seeds (for the dressing). If you're using the ramen seasoning packet, start with half and taste, adding more as desired.
6. * Assemble the Salad: Just before serving, pour the dressing over the coleslaw mixture and toss well to coat. Stir in the crushed ramen noodles and toasted nuts/seeds. Toss gently again.
