Street Corn Chicken
Ingredients:
3 cups shredded rotisserie chicken
Drizzle of olive oil (for reheating the chicken)
1 ½ cups corn kernels (fresh, frozen, or canned). About 2 ears of fresh corn.
¼ cup mayonnaise
¼ cup sour cream
1 garlic clove; minced
2 tbsp lime juice (divided)
2 tsp chili powder (divided)
½ tsp smoked paprika
¼ cup cotija cheese (plus more for garnish)
2 tbsp chopped cilantro (plus more for garnish)
Salt & pepper to taste
Directions:
1. In a dry skillet, cook the corn over medium-high heat until slightly browned/charred (about 5 minutes).
2. In a bowl, mix the mayonnaise, sour cream, garlic, lime juice, chili powder, smoked paprika, cotija cheese, and cilantro. Mix together well. Season to taste with salt & pepper. Set aside.
3. In a skillet over medium heat, warm the shredded chicken with a drizzle of olive oil. Season with 1 tsp chili powder and 1 tbsp lime juice. Stir and cook for 2-3 minutes or until the chicken is warmed through.
4. Toss the warmed chicken with the corn mixture.
Serve over rice with guacamole salsa, in a tortilla or taco shell with avocado and salsa, with tortilla chips, or any other way you would like to.
