Our favorite Cantonese Radish Cake Dim Sum (蘿蔔糕)

My dad teaches me to make our favorite Cantonese radish cake dim sum (蘿蔔糕)

🍄 RADISH CAKE (蘿蔔糕) RECIPE

1030 g of radish (2)
80 g of Chinese sausages (2)
100 g of Chinese uncured bacon
1 shallot
25 g of dried shrimp
6 shiitake mushrooms

SEASONINGS
1.5 tablespoon of sugar
1 tsp of salt
1/2 tsp of white pepper
2 tsp of neutral oil
2 stalks of scallions (optional)

WET BATTER
150 g of rice flour
35 g of corn starch
15 g of wheat flour
15 g of tapioca flour
215 mL of water
Note: water to flour (1:1)

🍄 INSTRUCTIONS
1. Prepare all ingredients. Cut radish. Dice all the other ingredients - Chinese sausage, Chinese uncured bacon, shallots, dried shrimp & shiitake mushrooms.
2. Stir fry dried shrimps until fragrant. Add oil and add in the rest of the ingredients. Stir fry and set aside.
3. Add radish into the pan. Let it cook until it releases water. Add seasonings - salt, sugar and white pepper. Cover & let it simmer.
4. Make a wet batter using rice flour, wheat flour, tapioca flour, cornstarch and water. Mix well until you get a thin liquidy consistency.
5. Add the rest of the ingredients in with the turnip. Mix well. Lower the heat. Pour in the wet batter. Mix until everything is well combined.
6. Transfer it into a dish. (We used a baking pan, but feel free to use any casserole dish.)
Steam for about an hour. Use a chopstick - poke into it and if it comes out clean, it means it’s cooked.
7. Take it out and sprinkle some scallions on top (optional). Let it cool in room temperature or in the fridge.
8. Cut it into small pieces & pan fry until crispy.
9. Enjoy with chili oil and oyster sauce!
