The Kanso is the only knife by Shun without a polished blade. The blade is made with Japanese AUS10A highly refined high-carbon vanadium stainless steel, which is full tang, with an interesting slit at the bottom. The slit serves no utility (to the best of our knowledge), but we're sure you can get creative.
The heritage finish blade hides scratches and gives a rustic look that only improves with age. The Kanso chef's knife and series are excellent for those in food service who want a Japanese blade with a 60 Rockwell that can handle a bit of abuse!
The handle of the Kanso series is the only one made with natural wood. It's constructed of tagayasan, an extremely dense wood traditionally used to create Samurai iron sword wood handles; it provides strength, balance, and easy cutting control
