The combination of roasted sweet squash and rosemary is delicious in this risotto. Pour in a good whack of cream and you have a wonderful weeknight meal that is not only easy to make, but easy to eat too! This is a two part recipe. In part one we get the squash roasting and start the cooking process. In part two we finish everything off and serve.
