Starting out as a vegan or on a plant based diet? here are some simple recipes that will help you guide through the transitioning, you know the ones that taste good, easy to make and perhaps something you are already familiar so you don't have too many surprises. Here are the recipes :-
Mushroom Fajitas
3 fajita warps
1 tbsp of fajita seasoning
100g Mushroom
1 bell pepper
1/2 red onion
1/2 avocado
fresh cilantro/coriander
optional : sriracha sauce
Method
1. Heat a pan and add 1 tbsp of oil. Slice the mushrooms , bell pepper and onion and add it to the pan, along with the fajita seasoning.
2. Cook for 8-10 minutes until browned
3. Add the veggies to the center of the fajita wrap and top it off with slice of avocado, cilantro and sriracha sauce.
Lentil Bolognese
Ingredients
250g/1 cup of cooked brown lentils
250g of spagetti
500g/ 1 jar marinara sauce
2 cloves of garlic
dried oregano
2 tbsp tomato paste
Method
1. Cook and drain the pasta.
2. To a hot pan add 1 tbsp of olive oil. Then mince the garlic cloves and add that in too. Heat for 1 min, then add the lentils, marinara sauce and tomato paste along with a tsp of oregano or dried herb of your choice.
3. Heat for 8-10 minutes, then add the cooked pasta and season to taste
Pasta Salad
Ingredients :
2 tbsp of olive oil
2 tbsp of balsamic vinegar
2 tsp of yellow mustard
3-4 sun dried tomatoes
5-8 black olives
1 cup of baby spinach
1/2 avocado
cherry tomatoes
1 red bell pepper
1/2 red onion
100g / 1 cup cooked pasta
Method
1. Cook and drain chosen pasta
2. Add the pasta to a bowl. Slice and add all the veggies
3. Add the oil, vinegar and mustard. Mix thoroughly and season accordingly.
4. Store it in the fridge for up to 3 days.
