So I had this big chunk of tough lean eye of round roast that I was going to cut up and use in a couple of different recipes. Then I decided to change it up a bit and smoke the beef in one piece then pull it apart to be used in those recipes.
Simple SPG rub for beef that I made up was a 4:2:1 S/P/G ratio.
200g Pink Himalayan salt
80g Regular black pepper corns
20g Szechuan pepper corns
50g Garlic powder
I failed to mention in the video that the GBS kettle ran between 250°F-275°F♨ and the cook time was around 7½ hours. The kettle had a desire to run at that temp for some reason and I wasn't going to screw with the vents. I was pretty stoned on the gummies, eh.
The taste of this beef was f*ckin' dynamite, just the right amount of smoke flavour that I was going for. It's just too bad that I did not have a more fatty cut of beef to work with. That was probably one of last summer like days of autumn that we would have until the spring, and I had a craving for BEEF!!!🥩
