the Rice & Meat
• 3 cups basmati rice
• 2 kg beef (I had Landi) Dry meat (with bones preferred)
• 1 large onion (sliced)
• 3 tbsp cooking oil
• 1 tsp salt (or to taste)
• 1 tsp black pepper
• 1 tsp cumin powder
• 1 tsp coriander powder
• 1 tsp garam masala
• 5–6 green cardamom pods
• 1 cinnamon stick
• 5 cups water or meat broth
For the Topping
• 2 medium carrots (julienned)
• ½ cup raisins
• 2 tbsp oil or butter
• 1 tbsp sugar (optional)
• ½ tsp cardamom powder
🍚 Instructions
Wash and soak the basmati rice for at least 30 minutes. In a large pot, heat oil and sauté sliced onions until golden brown. Add the meat and cook until well browned. Add salt, black pepper, cumin, coriander, garam masala, cardamom pods, and cinnamon stick. Pour in water or broth, cover, and let the meat cook until tender. Remove the meat and strain the broth, saving it for the rice.
In a separate pan, heat oil or butter and lightly fry the carrots. Add raisins, sugar (optional), and cardamom powder, then sauté gently until fragrant. Set aside.
Boil the reserved broth, add the soaked rice, and cook until the rice is about 80% done. Drain excess liquid if needed. Layer the rice and cooked meat in the pot, top with the carrot and raisin mixture, cover tightly, and steam on low heat for 20–25 minutes. Gently mix before serving.
