Fritatas are very versatile. They can be used for any meal, for breakfast serve with toast and jam. For luncheon you can serve it with some crusty bread and a small salad, and for dinner you can serve it alone, or with any veggie you like.
Ingredients
10 – 12 slices of Canadian bacon
1 pint of mushroom ends and pieces, drained of the canning liquid
4 ounces of cream cheese, cubed and at room temperature
½ Cup of each of the cheeses below, shredded and mixed together
colby, monterrey jack and italian style
½ Cup heavy cream or half and half
1/8 teaspoon each of the following spices, also mixed together
onion powder
garlic powder
ground black pepper
dried basil
¼ cup noniodized salt.
12 medium or large eggs (if using small eggs I use about 15)
Method
Preheat your oven to 350 F
Mix together your eggs and cream and whisk until completely emulsified
Grease a 9 inch pie pan with butter so both the bottom and sides are well coated
Add your ingredients to the pie pan in the following order until the pie pan is filled, being sure to save some cheese for the top. Repeat layers until all ingredients are in the pan.

cream cheese cubes
mushrooms
Repeat
When all dry ingredients are in your pie pan, pour you egg/cream mixture over the top, being sure to get it down inside the layers. (Option: You can add the egg mixture with each layer if you wish)
Place your pie pan on a wide pan such as a cookie sheet or pizza pan that you have lined with foil to catch any drips as the egg mixture cooks and expands.
Cook for 30 to 35 minutes, being sure to check it at 20 minutes. Some ovens cook much quicker than others and you don't want your fritata to burn.
When done, remove from oven. Allow to sit for 5 or so minutes while you add any additional cheeses to the top and let them soften and melt. Once this is done, slice and serve. Enjoy!
Notes: This is a very versatile dish as I said above. You can vary the ingredients as well. Any combination of cheeses and meats that you like can be used. Also, you can add veggies such as finely chopped onions, celery, zucchini, tomatoes that have been peeled and seeded, or any other that you enjoy.
