INGREDIENTS:
1 rabbit
salt and pepper
2 slices of bacon
1 tbsp cooking oil
3 cloves garlic minced
1/3 cup sake
1 red bell pepper, chopped
1 yellow onion, chopped
3 celery stalks, chopped
6-8 fingerling potatoes
1/2 head of white cabbage
2 tsp. fresh rosemary
2 cups vegetable stock

INSTRUCTIONS
1. Preheat oven to 375 degrees F.
2. Butcher the rabbit by separating into 5 pieces: thighs, front legs, and the back.
3. Season the meat with salt and pepper. With skin side down, add garlic to the top side of the meat.
4. Set the pot over medium high heat until hot. Sear the rabbit skin side first. Add chopped bacon around the meat. Flip the meat after 1 minute. Sear other side for 1 minute and set aside.
5. Deglaze the pot with sake (light on fire quickly). Reduce heat to medium low. Scrape off the bottom of the pan.
6. Add the bell pepper, onion, celery, potatoes, cabbage, vegetable stock, rosemary. Stir to combine.
7. Add the meat back in and bake 40 minutes.
8. Remove the lid and broil for 5 minutes.
9. Serve over rice with desired side dishes.
