Introducing our delectable Potato Masala – a perfect companion to those airy pooris!
This recipe serves: 4-5
Ingredients:
4 medium-sized potatoes, boiled and mashed
1 large onion, finely chopped
2 tomatoes, chopped
2 green chillies, finely chopped
1 tablespoon ginger-garlic paste
2-3 dried red chillies
1/4 cup cooking oil
1 cinnamon stick
2-3 cardamom pods
1/2 teaspoon turmeric powder
2 tablespoons curry masala (adjust to taste)
Salt to taste
Fresh coriander for garnish
1/2 cup coconut milk
Water (as needed to adjust consistency)
Step-by-Step Process:
1. Boil and Mash Potatoes:
Boil potatoes until fork-tender, peel, and coarsely mash.
2. Sauté Aromatics:
Heat oil in a pan, add cinnamon stick, cardamom pods, dried red chillies, chopped onions, and green chillies. Sauté until onions turn golden brown.
3. Add Spices:
Incorporate ginger-garlic paste, curry masala (we already have a video of making curry masala, you can check that out) and turmeric powder. Sauté until fragrant. Add chopped tomatoes, cooking until they soften and the oil separates.
4. Potatoes and Seasoning:
Add mashed potatoes, and salt to taste, ensuring the potatoes are well-coated with the spices.
5. Coconut Milk and Water:
Pour in coconut milk and water as needed to achieve the desired consistency. Simmer to perfection.
6. Garnish:
Garnish with fresh coriander, adding a burst of freshness to the dish.
