Kaju Mushroom Masala
Ingredients:-
Mushrooms - 200g
Cashew nuts- 1/2 cup
Oil - 2 tsp
Ghee - 1 tb spn
Cumin - 1/2 tsp
Onion chopped- 1
Turmeric- 1/4 tsp
Ginger garlic paste- 1 tsp
Tomato purée- 1 cup
Curd - 1/2 cup
Chilli powder- 1 tsp
Coriander powder- 1 tsp
Garam masala - 1/4 tsp
Sugar - pinch(optional)
Kasoori Methi - 1/4 tsp
Water - As Required
Salt - To Taste
Method:-
In a pan add oil, cumin, onion, salt and sauté till golden brown.
Now add turmeric, ginger garlic paste, tomatoes puree and cook it closed for 5 minutes. In curd add chilli powder, coriander powder, garam masala and mix it well . Add this to onion tomato gravy. And cook it for 5 more minutes and switch off the flame.
In a pan add Ghee, cashew nuts and fry them till golden colour then add mushrooms and sauté on high heat for 3-4 minutes. Add salt and chilli powder and kasoori methi. Then add onion, capsicum and toss it well.
Add the prepared gravy and cook it along with mushrooms for 1-2 minutes. Add coriander leaves and serve it along with Rice/ Roti
