Easy-to-make Korean plum wine - ‘maesil-ju’ goes back many centuries, combining maesil (aka Chinese plum or Japanese apricot) with strong soju and sugar. Like all good liquors, you can drink it right away, but the longer you leave it, the richer it tastes. Koreans traditionally like to make it for Summer, where it can be served neat or on ice!
