DEGI PALAK GOSHT
Ingredients
Mutton ½ kg
Spinach 1 kg
Onion 1 large chopped
Coriander ½ bunch
White cumin 1 tsp
Black cumin 1 tsp
Chili powder 1 tsp
Turmeric ¼ tsp
Salt 1 tsp heaped
Black pepper 1 tsp
Whole red pepper 8-10
Milk 1 cup
Clarified butter ¾ cup
Allspice powder 1 tsp
Ginger garlic paste 1 tbsp heaped
Green chilies grounded 1 tbsp
Coriander leaves chopped 1 ½ tbsp
Ginger chopped 1 tbsp
Cumin seeds roasted and grinded 1 tsp
Dried fenugreek leaves 1 tsp
Tomatoes 2 chopped
Cream 2 tbsp
Yogurt ½ cup
METHOD
Wash spinach well, add to it coriander leaves, green chilies, water and boil for 15 mins, remove and put it on a strainer, when all the water comes out from spinach, grind the spinach coarsely. Heat ¼ cup ghee and fry grounded spinach very well, add in milk and cook till milk dries. In another pan, heat ghee, fry onion, add mutton, ginger garlic paste, chili powder, salt, turmeric, black pepper, dried fenugreek leaves, roasted and crushed zeera, add chopped tomatoes, yogurt, fry mutton very well, add 1 cup water, cover and cook till mutton tender, then add to it spinach mixture with whole red chilies, onion, crushed cumin, allspice, cream, ginger chopped, mix, leave it on dum for 10 mins, serve.

SHINWARI DAAL KARAHI
Ingredients
Boiled black gram 2 cups
Onion chopped 1 cup
Garlic chopped 1 tbsp
Ginger chopped 1 tbsp
Salt 1 tsp
Chili powder 1 tsp heaped
Turmeric ½ tsp
Tomatoes boiled, skin removed and chopped 1 cup
Yogurt ½ cup
Boneless chicken cubes boiled 1 cup
Clarified butter ¾ cup
Allspice ½ tsp
Green chilies 6 sliced
Ginger sliced 2 tbsp
Chopped coriander leaves 2 tbsp
METHOD
Heat oil, fry chopped onion, add in boiled tomatoes chopped, ginger chopped, garlic chopped, chili powder, turmeric and salt, fry masala well, add in boiled black gram, fry well, add in boneless boiled chicken with yogurt, cook well, add ½ cup water, cover and cook, lastly add allspice, sliced green chilies, ginger sliced, chopped hara dhania, serve hot with nan.
