Ingredients:
10 dried scallops
12 dried shiitake mushrooms
1/2 lb pork spare ribs
1 pack frozen sea cucumber
2 shallot
2 scallion
2 big ginger slices
6-8 small ginger slices
1/5 tsp salt
1/2 tsp oyster sauce
1 tsp shaoxing wine
mushroom water
scallop water
cornstarch slurry

Spare ribs marinate:
1/4 tsp salt
1/5 tsp sugar
1/2 tsp soy sauce
1 tsp corn starch

Mushroom marinate:
1/4 tsp sugar
1 tsp oil
a few ginger slices

Blanch sea cucumber with:
a pot of water
1/2 tsp shaoxing wine

2 個 紅蔥頭
2 棵 蔥
2 大塊 薑片
6-8 小塊 薑片

1 茶匙 紹興酒
冬菇水
搖柱水
粟粉水勾芡

排骨醃料:
1/4 茶匙 鹽
1/5 茶匙 糖
1/2 茶匙 生抽
1 茶匙 粟粉水

冬菇醃料:
1/4 茶匙 糖
1 茶匙 油
數片 薑片

海參飛水:
一鍋水
1/2 茶匙 紹興酒
