Ingredients
(125g) unsalted butter
(135g) granulated sugar
2 large eggs
(125g) all-purpose flour
(25g) unsweetened cocoa powder
1 teaspoon vanilla extract
1 cup (175g) chocolate chips or chunks (optional)
1/2 cup (60g) chopped nuts (optional)
Instructions
Prepare the Pan:
Grease a heavy-bottomed skillet or a stove-safe baking pan with butter or non-stick spray. You can also line it with parchment paper for easier removal.
Mix the Wet Ingredients:
In a large bowl, melt the butter over low heat on the stovetop.
Once melted, remove from heat and stir in the sugar until well combined.
Allow the mixture to cool slightly before adding the eggs one at a time, stirring well after each addition.
Mix in the vanilla extract.
Combine Dry Ingredients:
In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder.
Mix Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Avoid overmixing.
Fold in the chocolate chips or chunks and nuts, if using.
Cook the Brownies:
Pour the batter into the prepared skillet or pan, spreading it evenly.
Cover the skillet with a tight-fitting lid or aluminum foil.
Place the skillet on the stovetop over the lowest heat setting possible. You can use a heat diffuser or a stack of a few kitchen towels under the skillet to prevent direct heat and avoid burning.
Cook for about 25-35 minutes, checking for doneness by inserting a toothpick or knife into the center. If it comes out mostly clean with a few moist crumbs, the brownies are done.
Cool and Serve:
Once cooked, remove the skillet from heat and allow the brownies to cool completely in the skillet.
