魷魚馬蹄蒸肉餅Steamed Meatloaf with Squid and Water chestnut
今天 做一個家常小菜Make a home-cooked dish today
材料有 乾魷魚, 馬蹄, 冬菇, 半肥瘦豬肉, 薑汁一湯匙Ingredients include dried squid, water chestnuts, mushrooms, semi-fatty lean pork, and a tablespoon of ginger juice
所有材料都要清洗乾淨All ingredients must be washed
用清水把魷魚浸泡 (浸魷魚的水不要倒掉, 稍後會有用) Soak the squid in clean water (don’t throw away the water in which the squid is soaked, it will be useful later)
我們選用比較細小的魷魚We choose smaller squid
去除魷魚表面的皮和眼睛部分Remove the skin and eyes from the squid
中間部分有一條軟骨, 都要去除There is a strip of cartilage in the middle, which needs to be removed
然後把魷魚切粒Then cut the squid into pieces
冬菇也需要用水浸軟Mushrooms also need to be soaked in water to soften them
切去莖部, 然後切粒Cut off the stems and cut into pieces
馬蹄切碎chop water chestnuts into pieces
醃豬肉, 用生抽兩湯匙, 蠔油一湯匙, 胡椒粉少許Marinate pork with two tablespoons of light soy sauce, one tablespoon of oyster sauce and a little pepper
攪勻stir well
然後加入魷魚粒, 冬菇粒Then add squid cubes and mushroom cubes
然後放入薑汁, 撈勻Then add ginger juice and stir well
加入味淋一湯匙Add a tablespoon of mirin
因味淋有甜味, 所以不用加糖Since mirin has a sweet taste, there is no need to add sugar
如果你選用米酒, 就要加少許糖If you choose rice wine, add a little sugar
做粟米粉水Make corn flour water
兩湯匙粟米粉, 加兩湯匙浸魷魚的水Two tablespoons of corn flour, plus two tablespoons of squid soaking water
把所有材料攪勻之後, 就慢慢加入粟米粉水After mixing all the ingredients, slowly add the corn flour water
分幾次加入Add in several times
然後大力攪勻Then stir vigorously
直至有黏性until sticky
最後加入馬蹄Finally add the water chestnuts
加了馬蹄的肉餅會比較鬆軟The meatloaf with water chestnuts will be softer
加入麻油一湯匙Add a tablespoon of sesame oil
在蒸盤(碟)的底部放一層油Put a layer of oil on the bottom of the steaming tray (dish)
然後把肉餅平均放進蒸盤Then put the meatloaf evenly into the steamer tray
然後再肉餅表面, 用一茶匙刮出幾個小孔Then use a teaspoon to scrape out a few small holes on the surface of the meatloaf.
蒸肉餅的時候 ,蒸氣就可以滲透在肉餅裏面When steaming the meatloaf, the steam can penetrate into the meatloaf
用保鮮紙把碟的表面蓋住Cover the surface of the dish with cling film
用室溫水開始蒸Start steaming with room temperature water
大概蒸20分鐘Steam for about 20 minutes
你會看見肉餅已經收縮You will see that the meatloaf has shrunk
表示肉餅已經蒸熟Indicates that the meatloaf has been steamed
試味taste
如果覺得味道不夠, 可以加少許生抽If you feel the flavor is not enough, you can add a little light soy sauce
現在味道剛剛好It tastes just right now
加入少許青蔥Add some green onions
用來配飯真是冇得頂It’s really good to serve with rice.
