This recipe utilizes one of the most nutrient dense part of an animal (besides the liver).
Beef Heart Stroganoff:
Ingredients-
*beef heart (or venison/elk)
*1 sweet onion sliced
*8 oz sliced portabella mushrooms
*3 cloves fresh garlic minced
*beef broth
*heavy whipping cream
*pasta of your choice
Directions-
Clean and slice beef heart (careful to remove all vascular components and trim fat off). Soak in evaporated milk overnight. Rinse and dry, season and sprinkle with flour for a light coating. Cook onion until soft, add mushrooms and then garlic. Remove from pan, add butter and beef tallow. In the hot pan add in the heart, when cooked add in the cooked onions/mushrooms, beef broth and splash of heavy cream to form a gravy. When thickened, add fresh rosemary and pasta to the pan, mix well and serve.
