I used my instant pot to speed up the cooking time on this dish. From start to finish it takes less than 30 minutes to make this colorful and tasty salad. If you don't like corn in a potato salad it can be omitted.
For most Americans a Korean potato salad ingredience list may seem a bit odd, Persian Cucumber, Carrots, Corn, and an Asian Pear. But, the combination with the potatoes and hard boiled egg adds color and texture not seen in a traditional American salad.
